Easter is a great time of year to get into baking, because the shops are FULL of chocolate treats that go really well with baked goods and other sweet treats. It means you don’t have to put much additional effort into making goodies that are really on theme! Here are our favourites…
No-bake Easter slices
You’ll need: 350g of biscuits (digestives, malted milk or similar), 300g condensed milk and 100g butter, plus chocolate and treats for the top.
Crush your biscuits, melt your butter, and mix both of these with the condensed milk. Press this into a baking dish and leave in the fridge to set. Once it solidifies, melt your chocolate and spread this over the top; then add on your choice of chocolate treats. Anything from small chocolate bunnies to speckled eggs or Easter sprinkles! Back into the fridge, and then cut into squares and enjoy.
Easter egg nests
These are essentially chocolate cornflake cakes (or you can use Rice Krispies) – but Easter-fied! Mix your cereal with melted chocolate until it’s all coated, then flip a cupcake tray upside down and mould your cereal mixture to the bottom of each individual cup. Leave in the fridge to set until they pop off, and they should look like little nests. Fill with small chocolate eggs of your choice, and they’re done!
Bunny ear cupcakes
Take your go-to cupcake recipe (there are loads of easy ones online if you’ve never made cupcakes before) and bake a batch. Pipe on some vanilla buttercream, ideally in a tall-ish swirl, and then add some bunny ears – and there are plenty of ways to make the ears! You could opt for mini churros, adding two curved like ears, pretzels, or even diagonally cut marshmallows. Cute, easy and fun!
Carrot brownies
And don’t worry – we don’t mean carrot flavoured brownies. Bake a batch of sumptuous chocolate brownies, using whichever recipe and additional fillings you fancy, in a circular cake tin. Once cool, cut into eight equal triangular slices, just as if you were slicing a cake. Whip up a batch of buttercream (or pick up some ready made frosting) and dye most of it orange, with some green too. Then pipe or spread a layer of orange buttercream onto each triangle, with a few little tufts of green buttercream at the wider top part of each slice. There you have it: cute carrot brownies!
Chocolate Easter cake
Of course, Easter is all about the chocolate – so take this opportunity to make a super decadent chocolate cake! We love the Jane’s Patisserie back to basics chocolate cake recipe because as the name suggests, it’s really easy to make. To put an Easter spin on it, add crushed speckled chocolate eggs to the buttercream, and decorate the top with any of the Easter themed chocolate treats adorning supermarket shelves across the nation.
